First thought: I need an ice cream scoop! Despite the un-roundedness of the ice cream, I promise y’all, it tastes delicious! Anyway, summer has finally kicked in here in central Illinois. And with this healthier alternative, I could eat this all day, everyday! Haha, just kidding.
This strawberry frozen greek yogurt is so easy to make, and it requires so little ingredients. It’s not too sweet and has a hint of tartness in it, which I love! I hope you all enjoy!
Prep time: 5 minutes
Total time: 2-3 hours
Yield: 4 cups
– 1 lb fresh strawberries
– 2 1/2 cup Greek yogurt
– 2/3 cup honey
1) Wash and de-stem the strawberries. Puree in a blender until smooth and no chunks remain, about 1 minute.
2) In a large bowl, whisk together the pureed strawberries with the Greek yogurt and honey until well-blended. Freeze the mixture for approximately 40 minutes.
3) Pour the mixture into an ice cream maker and follow manufacturer directions. You can have it like a soft-serve once the ice cream is made. Or alternatively, you can freeze it for a few hours until firm.
