Candied Walnuts

The funny thing about candied walnuts is that I always make them thinking “I can add this to all my salads for the next week”, only to eat them by the handfuls and they never ever touch a single salad.  They are that addictive.

Candied walnuts are quick and easy to make, sort of foolproof, and make great homemade gifts.

Ingredients

  • 1 1/2 cup raw walnut halves
  • 1 Tb unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • Sea salt, for garnish

Method

  1. Preheat oven to 350°F.  On a parchment-lined baking sheet, toast walnuts for 5-10 minutes, or until golden brown.
  2. In a medium saucepan, melt unsalted butter.  Stir in brown sugar and granulated sugar.  Stir constantly until sugar is completely melted and the syrup is a light brown color (like maple syrup).
  3. Quickly stir in toasted walnuts and give it a quick toss to coat.  Spread walnuts on the parchment-lined baking sheet.  Use 2 forks to quickly separate the walnuts. Sprinkle with sea salt.  Let cool completely before serving.
